Kroketten are a beef or chicken flavored mixture that is breaded and deep fried to crunchy perfection. Served with bread and mustard

These fish are caught in May when their fat levels are the highest, brined and frozen immediately. This way they will continue to cure in a frozen state. They are soft and salty and extremely tasty. Served on a bed of let-tuce or bread and smothered in chopped onions.
