“I’m Filipino, but I was lucky enough to be born and raised here in Vancouver,” says Minami’s chef de cuisine Alan Ferrer. “I love to showcase what we have right here in our backyard, from the Interior and the mountains to all the goodness of the ocean.” Since opening in the heart of Yaletown on Mainland Street in June 2012, Minami has been at the forefront of Vancouver’s popular dining scene with its signature Aburi-style charcoal flame-seared sushi.
Wait… sushi that’s cooked? Yes, that’s what Aburi-style sushi is. “People often have a question mark about that,” laughs Alan, “but when they get here, they see our sushi chefs prepare the sushi, then add the sauce and flame-sear it, then they understand. What makes us different is that you don’t need soy, wasabi, any of those things. Each individual roll and nigiri has already got its own dressing on it that works perfectly with the fish.”
